Dressings
Mango & Ginger Dressing
- flesh of 1 mango
- 1/2 tbsp ginger (powder or grated fresh)
- pinch cayenne pepper
- 1/2 tbsp lemon juice
- 1 cup cold-pressed olive oil
Place all ingredients in a blender and whizz till very smooth.
Orange & Ginger Dressing
- 1/4 cup coconut oil
- 1/4 cup orange juice freshly pressed
- 2 tbsp tamari or coconut aminos
- 1 tbsp orange zest or 1-2 drops essential oil (food grade)
- 1 clove crushed garlic
- 1 piece ginger peeled and grated (about 2 cm length)
- pinch good salt
- 1 tbsp xylitol or other sweetening (date paste or raw honey)
Place all ingredients in a blender and whizz till smooth.
Creamy Spicy Dressing
- 2.5 cups orange juice
- 2 cups sunflower seeds (soaked 2 hours)
- 1/2 onion or 1 spring onion
- skin from 1/2 lemon chopped
- 8 tbsp almond butter
- 3 tsp curry powder
Place all ingredients in a blender and whizz till smooth
