Aloe Vera Jelly with coconut 'yoghurt'
- 750 mls (3 cups) aloe vera juice
- 1 tbsp powdered gelatine
- 1 tbsp lime juice
- 6 drops liquid stevia
- small handful mint sprigs
- 1 tsp grated lime zest
- 170 gm fresh coconut flesh (from white young coconuts)
- 125 mls coconut water
- pinch good sea salt
- 1/2 tsp stevia or sweetener of choice
Mix all ingredients in a blender until smooth and creamy.
Gently heat aloe vera juice until hot but not boiling.
Then add gelatine which has been previously 'bloomed'
(bloom by adding gelatine powder to a little water and leave for a few minutes to swell)
Whisk gelatine and aloe juice together until dissolved.
Add lime juice, stevia, and mint and continue whisking while heating to boiling.
Remove from heat, remove mint sprigs and add lime zest.
Pour into jars or glasses and chill in fridge until set.
Serve topped with a dollop of coconut yoghurt, mint leaves, and lime wedge.
