Raw Pumpkin Soup

Amounts in this recipe are approximate. Adjust for taste and thickness at the end.

  • 2 cups crown pumpkin, skin removed, chopped into small pieces
  • 1 tbsp soy miso
  • 3/4 cup almond milk
  • 1/2 cup rejuvelac (optional)
  • 1 tsp nutritional yeast
  • salt and pepper
  • grated orange rind
  • spring onions sliced

Method

Put all ingredients into blender and whizz till very smooth. A powerful blender will make it smoother

Season with salt and pepper

Pour into a lovely soup bowl and garnish with sliced spring onions and grated orange rind or your favourite chopped herbs would be nice too.
