Raw Vanilla and Honey Ice-cream

500mls almond milk

300gm soaked cashews

150gm raw honey

2 vanilla pods scraped out

1 tbsp lecithin (sunflower)

1/2 tsp salt

 

Using a high powered blender put all the ingredients in and blend on high speed till it is well emulsified and smooth.

If you don't have a high powered blender use a jug and a stick blender.

Place into a container and put in a freezer or use an ice-cream machine if you're lucky enough to have one.
