Raw Vegetable and Nut/Seed Pate

Basic Paté Recipe
•    2 cups of nuts or seeds
•    lemon juice/lime juice
•    2 cups of vegetables, chopped into chunks

Using a food processor grind up the nuts first, then add the chopped vegetables, then the lemon juice. Season with whatever flavour you prefer. Fresh lemon juice and salt will act as a preservative. They allow the paté to be stored between 4 - 7 days. Combine the pate with a pre-made salads throughout the week for quick, fast, delicious meals.  Or serve with a selection of raw vegs eg cucumber slices, carrot slices, small little gem lettuce leaves, radishes, etc

Variations:

Thai: add fresh basil, oregano, marjoram with coriander etc

Chinese: Use 5-spice mix, soy sauce instead of the lemon juice

Mexican: use a little chilli, either flakes or powder, lime juice and maybe smoked paprika too
