The Most Satisfying Kale Salad

Base Salad:

  • 200gm kale
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp orange juice
  • 1/4 tsp good salt

Additional Ingredients:

1 large carrot, peeled
1 kumara (sweet potato) peeled
1 ripe avocado
70 gm stoned olives
4 sun-dried tomatoes

Wash the kale, cut off the tough stalk and chop the leaves into 2.5cm pieces.

Put leaves in a bowl and drizzle over the rest of the base ingredients and massage them until they soften and go a darker green.

Grate carrot and kumara or spiralise them.

Slice, chop or cut remaining ingredients and toss with the kale.

Serve up and wait for the compliments!

Massaging the salt into the kale will break down the cell walls making it easier to digest.
