Wild Blueberry 'Yoghurt'

  • 2 bananas (frozen optional)
  • 1 cup frozen wild blueberries (Countdown or New World)
  • 1 tsp lemon juice
  • ½ tsp vanilla powder, cinnamon or cardamom (or 1 tsp essence)

Combine banana, blueberries, lemon juice and vanilla, cinnamon or cardamom in a blender and blend till smooth.

Chill in fridge for at least 3 hours or overnight. Serve in glasses with extra fresh fruits.

An option is to add chia seeds to this and stir or the first few minutes till it begins to set.

Serve in a pretty glass layered with fresh fruit and topped with whipped coconut cream.
