Water kefir 'grains' are completely different to milk ones. They look more like translucent crystals and work the same way as milk kefir, creating a slightly bubbly drink. These are put into a sweetened water solution with either white, organic raw or brown sugar. Baking soda or molasses is added to give vital minerals for the grains to eat. Sometimes an organic dried date, apricot or fig can be added for extra sweetness for the bacteria. I also add one slice of lemon and cover with a breathable cloth. Only brew these grains for a maximum of 2 days then strain and start again. Reserve a couple of tablespoons to start a new batch. Leftover grains can be put in your compost, eaten in a smoothie or fed to the chooks.
