As heard on 'Healthy Options' - my Radio show on FreshFM. UP your energy with this high iron "Joothie"

I call this a 'Joothie' as it's a mix of a smoothie and partly juice. Yes that's a new word I've just invented !

  • 50gm unsulfured dried apricots
  • 15ml (1 tbsp) pumpkin seeds
  • 250gm carrots
  • 50gm spinach
  • 15ml )1 tbsp) lemon juice
  • 10ml (2 tsp) kelp powder
  • mineral water water kefir sparkling water etc
  • Garnish chiffonade of spinach or pumpkin seeds finely chopped

 

  1. Chop apricots quite fine and pour over 1/2 cup boiling water. Let soak for 10-15 mins
  2. Chop pumpkin seeds and carrots
  3. Juice the carrots and spinach and place the resulting juice into a blender
  4. Add apricots pumpkin seeds lemon juice.
  5. Pour all into a tall glass over ice cubes. Add a colourful straw and drink to your health and more energy for your wonderful body!
  6. Note: Garnish with chiffonade of spinach and some chopped pumpkin seeds
